In Karnataka, the vegetable pulav is prepared slightly different. A masala coconut paste is ground and added which makes the pulav aromatic and flavourful. This is a very easy one pot recipe ideal for lunchbox.
Ingredients
- 0.5 onion thinly sliced
- 1 tomato finely chopped
- 1 carrot cubed small
- 15 beans cut into 1 inch size
- 1 potato cubed small
- 1 cup rice
- 2 cup water
- Salt to taste
Ingredients to be ground to paste
- 6 sprigs of coriander leaves
- 6 sprigs of mint leaves
- 0.3 cup coconut grated
- 0.5 onion roughly chopped
- 0.5 inch ginger
- 3 garlic cloves
- 3 green chillies
- 0.25 cup water
Seasoning Ingredients
- 3 tbsp oil
- 2 bay leaf
- 1 clove
- 1 inch cinnamon
- 2 sprig curry leaves
Preparation
- Soak the rice in water for 20 minutes
- Blend into a smooth paste all the ingredients mentioned under ground to be paste.
Method
- Heat oil in a pressure cooker. Add all the seasoning ingredients. Saute for 1 minute.
- Add thinly sliced onions. Saute till the onions turn translucent.
- Add finely chopped tomatoes. Saute till the tomatoes turn mushy.
- Add the ground masala paste and mix well. Saute for 2 minutes.
- Add the chopped vegetables (carrot, beans and potatoes). Add salt and water. Mix well.
- Once the water is hot, add the soaked rice.
- Mix well and bring it to boil.
- When water starts boiling, reduce the flame to low and close the cooker. Do not use whistle/weight. Just invert a small cup to prevent steam from escaping.
- Cook on very low heat for 6 min and switch off. Open the cooker after 5 min.
- Serve hot and enjoy with raita / coconut chutney.
Notes
- Green peas can also be added.
