Millet Pulav

I have a habit of stocking new types of food items which are otherwise not included in our daily food. I am fond of trying new recipes with different grains and vegetables. If any of these recipes are liked by all , then it starts visiting us more often in the meal plans. Being a working mom due to the hectic schedules , these new food grains or vegetables often take a back seat in the kitchen and at times end up in trash. When I shopped for foxtail millet this time, I was determined to try a recipe and ended up in making Pulav.  We liked it and found it as a good replacement for rice.

Preparation

  1. Wash and soak the millets in warm water for 1 hour. Drain the millets and keep aside.

Method

  1.  Heat oil. Add all the seasoning ingredients and saute for a minute.
  2.  Add finely chopped ginger and saute for a minute.
  3.  Add the chopped vegetables and mint leaves. Saute for 3-4 minutes till the raw smell goes away.
  4.  Add water and salt. Bring it to boil.
  5.  Add the millets to the boiling water.
  6.  Cook covered on a medium flame till the millets are completely cooked and there is no more water.
  7.  Serve hot with raita or pickle.

Note

  1. Always serve the pulav warm.
