Aloo Snow Peas

Being from South of India, I have never come across Snow peas. After moving here to Cooma , a regional town in Australia, I have less access to Indian vegetables. So, we try to make use of each vegetable locally available. We experimented Snow peas initially in the pasta and loved the crunchiness of the fresh Snow peas. I decided to make an Indian sabzi to go along with Chappathi.

  1. After adding Snow peas, roast only for another 5 minutes. This allow the Snow peas to stay fresh and crunchy.
