Being from South of India, I have never come across Snow peas. After moving here to Cooma , a regional town in Australia, I have less access to Indian vegetables. So, we try to make use of each vegetable locally available. We experimented Snow peas initially in the pasta and loved the crunchiness of the fresh Snow peas. I decided to make an Indian sabzi to go along with Chappathi.

Ingredients
- 5 medium potatoes cubed small
- 200 g snow peas cut into 1 inch length
Spice powder
- 0.25 tsp turmeric powder
- 0.5 tsp red chilli powder
- 0.5 tsp Kitchen king vegetable masala
- 0.5 tsp coriander powder
- 0.25 tsp garam masala powder
Seasoning Ingredients
- 2 tbsp oil
- 0.5 tsp cumin seeds
Method
- Heat oil. Add seasoning ingredients.
- Add cubed potatoes. Saute for 2 minutes.
- Add all the spice powders.
- Saute till the potatoes get roasted well and turn crispy.
- Add Snow peas and roast for another 5 minutes.
- Enjoy hot with phulkas.

Notes
- After adding Snow peas, roast only for another 5 minutes. This allow the Snow peas to stay fresh and crunchy.
