Bhindi rice / Okra rice

I had few bhindi left in fridge but not enough to make curry. So just was googling around (at office 😉) to see what I can do with it. Most of my meal planning is done at office just giving a break to work. Or else kitchen will come to a stop if I go to home after office and think what to cook with two naughty monkeys around.

Then I came across bhindi rice from Jeyashri’s kitchen. The recipe was really helpful.
I tried the recipe and packed it for lunch box with papad and raita. (not in the pic -clicked in the morning rush).

So lunch planning got sorted , few bhindi left out did not go into garbage and the lunch turned out yummy.

Ingredients

  • Bhindi / Okra – 15 nos thinly sliced
  • 2 medium sized onion finely chopped
  • 1 inch piece ginger finely chopped
  • 1 garlic clove finely chopped
  • 1 medium tomato finely chopped
  • 1 cup cooked rice
  • 2 tbsp peanuts

Spice powders

  • 0.25 tsp turmeric powder
  • 4 tsp Sambar powder
  • 0.5 tsp Pav Bhaji Masala

Garnishing Ingredients

  • 2 tbsp coriander leaves finely chopped

Preparation

Cook the rice.

Method

  1.  Heat oil and add finely chopped onions. Saute it until it turn translucent.
  2.  Add ginger garlic paste and saute till raw smell goes.
  3. Add peanuts and saute for 2 minutes till it gets roasted.
  4.  Add finely chopped tomatoes and saute till it turns mushy.
  5.  Add all the Spice powders. Mix well and add thinly sliced bhindi.
  6.  Cook till bhindi becomes tender.
  7.  Add cooked rice and mix well.
  8.  Garnish with coriander leaves and enjoy.

Notes

  1.  The rice should be cooked dry without moisture.
  2.  Ginger garlic paste can be alternately used. We personally prefer freshly chopped ginger and garlic.
