I had few bhindi left in fridge but not enough to make curry. So just was googling around (at office 😉) to see what I can do with it. Most of my meal planning is done at office just giving a break to work. Or else kitchen will come to a stop if I go to home after office and think what to cook with two naughty monkeys around.
Then I came across bhindi rice from Jeyashri’s kitchen. The recipe was really helpful.
I tried the recipe and packed it for lunch box with papad and raita. (not in the pic -clicked in the morning rush).
So lunch planning got sorted , few bhindi left out did not go into garbage and the lunch turned out yummy.

Ingredients
- Bhindi / Okra – 15 nos thinly sliced
- 2 medium sized onion finely chopped
- 1 inch piece ginger finely chopped
- 1 garlic clove finely chopped
- 1 medium tomato finely chopped
- 1 cup cooked rice
- 2 tbsp peanuts
Spice powders
- 0.25 tsp turmeric powder
- 4 tsp Sambar powder
- 0.5 tsp Pav Bhaji Masala
Garnishing Ingredients
- 2 tbsp coriander leaves finely chopped
Preparation
Cook the rice.
Method
- Â Heat oil and add finely chopped onions. Saute it until it turn translucent.
- Â Add ginger garlic paste and saute till raw smell goes.
- Add peanuts and saute for 2 minutes till it gets roasted.
- Â Add finely chopped tomatoes and saute till it turns mushy.
- Â Add all the Spice powders. Mix well and add thinly sliced bhindi.
- Â Cook till bhindi becomes tender.
- Â Add cooked rice and mix well.
- Â Garnish with coriander leaves and enjoy.
Notes
- Â The rice should be cooked dry without moisture.
- Â Ginger garlic paste can be alternately used. We personally prefer freshly chopped ginger and garlic.
