Vegetable gothsu

Vegetable Gothsu is an easy accompaniment for Idli and Dosa from Tamil cuisine. This is a dal and veggie combination. I was in an experiment of making my family eat drumstick leaves. They do not like it due to the bitterness. So thought of making drumstick leaves dosa which makes it easy to accept. And paired it up with Vegetable Gothsu. Vegetable Gothsu turned out to an excellent accompaniment for Drumstick leaves Dosa.

Ingredients

  • 2 cups Mixed vegetables (carrot, beans) chopped
  • 0.75 cup Moong dal yellow / Split yellow dal
  • 1 large Onion finely chopped
  • 4 Green Chillies Slit
  • 1 inch Ginger finely chopped
  • 1 Garlic clove finely chopped
  • 1 large tomato finely chopped
  • 2 cups water

Spice powders

  • 0.25 tsp Turmeric powder

Seasoning Ingredients

  • 2 tbsp Oil
  • 0.5 tsp mustard seeds
  • 0.5 tsp cumin seeds
  • 0.25 tsp fenugreek seeds
  • 1 sprig of curry leaves
  • A generous pinch of hing / asafoetida

Garnishing Ingredients

  • 2 tbsp finely chopped coriander leaves

Preparation

Soak moong dal in enough water for 30 minutes.

Method

  1.  Heat oil in a pressure cooker. Add all the seasoning ingredients. Add finely chopped ginger and garlic. Saute for 2 minutes.
  2.  Add finely chopped onions and slit green chillies. Saute till onions become translucent.
  3.  Now add the chopped vegetables and tomatoes.
  4.  Add the soaked moong dal, salt and turmeric powder.
  5.  Add water and pressure cook for 2 whistles.
  6.  Garnish with coriander leaves and serve hot.

Notes

  1.  The dal should be cooked perfectly but should still hold its shape.
  2.  Vegetables like chow chow / chayote , brinjal can be added.
