Hing Aloo Jeera

Hing Aloo Jeera is an easy no onion no garlic recipe. The dish is spicy and tangy. This Uttar Pradesh style hing Aloo jeera taste best with phulkas / rice and dal.

This is normally a rescue dish at our home when we run out of vegetables. Being one of our favourite dish, any left overs will be in high demand. Such times these end up being our breakfast too as chapathi rolls.

Ingredients

  • 3 medium sized potatoes boiled , peeled and cubed
  • 1 green chilli finely chopped
  • 0.5 inch ginger finely chopped

Spice powders

  • 0.25 tsp turmeric powder
  • 0.5 tsp red chilli powder
  • 1 tsp coriander powder
  • 1 tsp amchur / dry mango powder
  • 3 pinches of hing / asafoetida

Seasoning Ingredients

  • 1 tbsp oil
  • 2 tsp cumin seeds

Garnishing Ingredients

  • 2 tbsp coriander leaves finely chopped

Preparation

  1. Boil the potatoes. When slightly warm , peel and cube them.

Method

  1. Heat oil in a pan. Add cumin seeds and let them splutter.
  2. Add hing / asafoetida
  3. Add the chopped potatoes and mix well.
  4. Add all the spice powders. Mix well and saute for 3 minutes.
  5. Garnish with coriander leaves.
  6. Serve hot with phulkas / rice and dal.

Notes

  1. Do not over cook the potatoes.
