Beetroot rice is an easy to cook and a healthy dish. It is a great way to make kids eat beetroot. The recipe is toddler friendly too.
The addition of lime juice balances the sweet flavour from beetroot.

Ingredients
- 1 cup Basmati rice
- 1 cup thinly sliced onions
- 1 slit green chilli
- 1 inch ginger finely chopped
- 1 garlic clove finely chopped
- 1 small tomato finely chopped
- 1 cup grated beetroot
- 2 tbsp finely chopped mint leaves
- 2 tbsp finely chopped coriander leaves
- Salt to taste
- 2 cups water
- 1 tbsp fresh lemon juice
Spice powders
- 1 tsp Biriyani masala
- 1 tsp Sambar powder
Seasoning Ingredients
- 1 tbsp oil
- 1 Bay leaf
- 2 cloves
- 1 inch piece cinnamon
- 1 cardomom
Preparation
- Wash and soak the rice for 20 minutes. Drain the water and keep it aside.
Method
- Heat the oil in pressure cooker and add all the seasoning ingredients. Saute for a minute.
- Add thinly sliced onions and saute until it turns translucent.
- Add finely chopped , garlic and slit green chilli. Saute till the raw smell of garlic goes away.
- Add finely chopped tomatoes and cook till it turns mushy.
- Add grated beetroot, mint leaves , coriander leaves. Mix well.
- Add all the spice powders and salt. Mix well and saute for a minute.
- Add water and lemon juice.
- Once the water is hot, add the soaked rice.
- Mix well and bring it to boil.
- When water starts boiling, reduce the flame to low and close the cooker. Do not use whistle/weight. Just invert a small cup to prevent steam from escaping.
- Cook on very low heat for 6 min and switch off. Open the cooker after 5 min.
- Serve hot beetroot rice with raita.

Notes
- Make sure to add lemon juice. Otherwise, the rice turn to be sweet.
