Methi Pulav is a tasty recipe to include Methi in diet. This rice taste really good without even a little bitterness. This is ideal for Lunch box.

Ingredients
- 1 cup Basmati Rice
- 2 medium size onion finely chopped
- 3 medium tomatoes finely chopped
- 1 inch ginger finely chopped
- 2 garlic cloves finely chopped
- 1 cup Methi leaves tightly packed
- Salt to taste
- 2 cups water
Spice powders
- 2 tsp coriander powder
- 1 tsp red chilli powder
- 0.25 tsp turmeric powder
- 0.75 tsp garam masala powder
Seasoning Ingredients
- 1 tbsp oil
- 1 tsp cumin seeds
Preparation
- Sprinkle salt on the chopped methi leaves and keep aside for 20 minutes. Then rinse the methi leaves under running water. This helps to reduce the bitterness of leaves.
- Cook 1 cup Basmati rice with 2 cup water.
Method
- Heat oil and add cumin seeds. When the cumin seeds splutter, add finely chopped onions. Saute till the onion turns translucent.
- Add finely chopped ginger and garlic. Saute till the raw smell of garlic goes away.
- Add finely chopped tomatoes and saute till the tomatoes turn mushy.
- Add all the mentioned spice powders. Saute for 2 minutes.
- Add finely chopped methi leaves and saute well till the leaves wilt.
- Add the cooked rice and salt. Mix well but gently so that the rice grains do not break.
- Serve hot with Papad and Raita / Salad.

Note
- The rice should be cooked dry without any moisture.
