Drumstick leaves stir fry

Drumstick leaves are well known for their medicinal properties. Drumstick leaves are said to normalize blood sugars and are recommended to be used regularly.These leaves are bitter in taste. So my husband and kids are reluctant to include them in the diet though I tried few times.  I chose this time to make a stir fry along with potatoes. The idea went well and got a green flag to cook it often.

Ingredients

  • 5 potatoes large boiled, peeled and cubed
  • 2 cups drumstick leaves finely chopped
  • 5 garlic cloves finely chopped
  • 2 sprig of curry leaves
  • 5 green chillies slit
  • Salt to taste

Spice powders

  • 1 pinch hing
  • 0.25 tsp turmeric powder

Seasoning Ingredients

  • 1 tsp cumin seeds
  • 0.5 tsp mustard seeds
  • 1.5 tbsp urad dal
  • 1.5 tbsp chana dal
  • 2 red chilli broken
  • 2 tbsp oil

Preparation

  1.  Sprinkle salt on the chopped drumstick leaves and keep aside for 20 minutes. Then rinse the drumstick leaves under running water. This helps to reduce the bitterness of the leaves.
  2.  Boil potatoes for 2 whistles. Do not make them mushy. Peel the skin and cube them.

Method

  1. Heat oil. Add all the seasoning ingredients. Add garlic. Saute till the dal turns golden colour. Add curry leaves and green chillies. Saute for 2 minutes.
  2.  Add boiled potatoes, salt and spice powders. Saute for 7 minutes
  3.  Add the drumstick leaves and mix well. Stir fry them till the leaves wilt off.
  4.  Enjoy hot with phulkas.

Notes

  1.  Make sure to saute till the drumstick leaves wilt.
  2.  The dish should be dry. There should be no moisture.
