Broccoli carrot sabzi / palya

Broccoli should be at the very top of the grocery list if you are planning to eat healthy. Broccoli decreases the risk of obesity, diabetes, heart disease, and overall mortality. It may also promote a healthy complexion and hair, increased energy, and overall lower weight.

How to include Broccoli in easy way ??. We normally used to saute or steam it. But this was becoming monotonous. And finally came to an end. Yes, got bored and stopped buying it. Few times ended in garbage too.. Then thought of making it up into an Indian curry to have with chappathi . Tried the below recipe and ended up quite good. An easy go to healthy recipe which can be included in any day dinner!

Ingredients

  • 1 medium sized Broccoli separated into florets
  • 2 carrots sliced
  • 1 medium onion finely chopped
  • 1 medium tomato finely chopped
  • 1 inch ginger finely chopped
  • 1 garlic clove finely chopped
  • 1 green chilli slit
  • Salt to taste

Seasoning Ingredients

  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1 sprig curry leaves
  • 1 pinch hing / asafoetida

Spice powders

  • 1 tsp black pepper powder

Method

  1.  Heat oil in a pan. Add mustard seeds and hing. Let the mustard seeds splutter.
  2.  Add curry leaves , finely chopped ginger and garlic. Saute till the raw smell of garlic goes away.
  3.  Add finely chopped onions and saute till the onions turn translucent.
  4.  Add finely chopped tomatoes and saute till tomatoes turn mushy.
  5.  Add sliced carrots. Sprinkle little water and cook covered till carrot becomes soft.
  6.  Add broccoli florets. Sprinkle salt and pepper powder. Cover the pan with a lid and cook for 5 minutes.
  7.  Enjoy hot with phulkas.

Notes

  1.  Broccoli and carrot should not be overcooked. They should be crisp.
  2.  Capsicum can be added additionally.
